<p><strong><em>**<span style="text-decoration: underline;">Préparation</span> :</em></strong></p>
<p>- Préparez la génoise (<a href="http://cuisine-airlines.com/?p=260">recette</a>) et coupez-la en 2 (horizontalement).</p>
<p>- Recouvrez la base du cercle à pâtisserie (22cm de diamètre) de papier d&#8217;aluminium et tapissez les bords d&#8217;un film en plastic. Placez la couche de génoise dans le fond.</p>
<p>- Préparez le praliné croustillant : faites fondre la pralinoise au bain-marie avec 3 c.à s. de lait. Incorporez les pralins et les crêpes dentelle émiettées. Etalez uniformément cette pâte sur la génoise.</p>
<p>- Lavez et essuyez quelques fraises. Coupez-les en 2 verticalement et placez-les sur la couche de praliné, faces coupées contre les bords du cercle.</p>
<p>- Préparez la mousse au chocolat : faites fondre le chocolat noir au bain-marie avec 6 c.à s. de crème liquide. Laissez refroidir un peu.</p>
<p>- Battez les 600mL de crème liquide en chantilly puis incorporez délicatement au chocolat fondu.</p>
<p>- Remplissez le moule de cette mousse au chocolat. Mettez la mousse restante dans une poche à douille et faites des motifs sur la surface du gâteau pour lui donner un peu de relief (libre cours à votre imagination).</p>
<p>- Placez le gâteau au frais pendant toute une nuit.</p>

<p>- Coupez la viande de boeuf en cubes. Faites mariner dans un mélange de sauce de soja, sucre, huile (1 c. à s.) pendant 30 minutes.</p>

<p>- Faites chauffez un peu d&#8217;huile dans un wok et faites sauter le riz cuit et refroidi (le mieux c&#8217;est de prendre du riz préparé la veille). Ajoutez le concentré de tomate et remuez jusqu&#8217;à ce que le riz soit bien coloré uniformément. N&#8217;oubliez pas de saler et de poivrer. Réservez.</p>
<p>- Faites chauffer un peu d&#8217;huile dans le wok, faites-y revenir les gousses d&#8217;ail écrasées. Ajoutez les cubes de viande. Faites sauter jusqu&#8217;à ce qu&#8217;ils soient bien cuits et répartissez-les dans 4 assiettes avec le riz.</p>
<p>- Servez chaque riz Lôc Lac avec un oeuf au plat et 1 demi tomate découpée en quartiers. Arrosez le riz et la viande du jus d&#8217;un quartier de citron.</p>

<p><span style="color: #0000ff;">- Cut the meat into cubes and let marinate in a mix of soy sauce, sugar and oil (1 tbsp) for 30 minutes. </span></p>
<p><span style="color: #0000ff;">- Heat a little oil in a wok, stir fry the cold cooked rice (the best is to use rice prepared one night before). Add tomato paste and mix until having a homogeneous coloring. Salt and pepper to taste. Set aside. </span></p>
<p><span style="color: #0000ff;">- Heat a little oil, add in curshed garlic and stir fry to fragrant. Add beef cubes and stir fry until done. </span></p>
<p><span style="color: #0000ff;">- Divide rice and beef in 4 plates.</span></p>
<p><span style="color: #0000ff;">- Serve each Lôc Lac with 1 fried egg and half of a tomato cut in wedges. Press juice of one lemon wedge over beef and rice.</span></p>
